Carved into the rock, the Cantina della Fortezza is much more than just a winemaking site; it is a legacy etched in tuff, a silent witness to ancient techniques and secrets passed down through generations.
Over the centuries, the cellar’s rooms have seen the passage of farmers and merchants. Here, the memory of the people of Sorano merges with the land, and wine becomes the protagonist of a story.
The “tinaia”, the long tunnel stretching nearly ninety meters, the barrel rooms, every wall, every mark left on the stone stand as a testament of the deep bond between humanity, nature, and the traditions of the Città del Tufo.
The wine production followed an ancient ritual, made up of skilled gestures and deep respect of the land. The fermentation vats and two large concrete barrels, each capable of holding up to 100 quintals of grapes, were the beating heart of the winemaking process all over the region. Today, little by little, we are transforming the cellar into a winemaking and tasting environment where, through experimentation, we are initiating a process of innovation in the area’s wine scene.
Ciliegiolo and Procanico, native grape varieties of this land, crafted with modern techniques are the main actors in this process!
A rosé wine with a strong personality, born from the spiciness of Ciliegiolo and the delicacy of white vinification. A fresh and vibrant wine, with mineral notes that tell the story of the land it comes from.
An elegant and complex white wine, made of Trebbiano and Procanico.
Thanks to cold maceration at a controlled temperature, spontaneous fermentation, and a brief passage in wood, it develops a persistent bouquet of white flowers, vanilla, cocoa, honey, and saffron.
Discover the Fortress Historic Cellar through a unique experience that combines history and flavor. The guided tour begins with a journey through the cellar, where we will retrace together the history, ancient environments and winemaking techniques.
This is followed by a tasting of the Burrasca and Snello wines from our winery, I Tre Cippi, paired with a small sample of our extra virgin olive oil on a baked bread and local pecorino cheese.
